Valpolicella Ripasso is one of the most distinctive wine styles from Veneto, produced using a traditional technique in which Valpolicella wine is refermented on the pomace of Amarone or Recioto.
This process enhances the wine’s structure, color, and aromatic complexity while preserving good freshness.
Made mainly from Corvina, Corvinone, and Rondinella grapes, Ripasso wines are known for their intense profile with notes of ripe cherry, plum, spices, and light cocoa hints.
Compared to basic Valpolicella, they offer more body and depth, while remaining more approachable and versatile than Amarone.
They pair well with flavorful pasta dishes, red meats, roasts, and medium-aged cheeses.
