Il Contratto Millesimato Alta Langa DOCG Pas Dosé è uno spumante Metodo Classico che celebra la volontà della cantina di produrre solo vini millesimati, enfatizzando le peculiarità di ogni vendemmia. Ottenuto da uve 80% Pinot Nero e 20% Chardonnay provenienti dai vigneti di Bossolasco, situati nella parte più alta delle Langhe, tra i 600 e gli 800 metri s.l.m., questo spumante affina per almeno 30 mesi sui lieviti, con remuage effettuato a mano. Al naso si presenta con aromi morbidi e delicati, con sentori floreali e agrumati. Al palato è fresco e sapido, con un perlage meravigliosamente fine. Si consiglia di servirlo a una temperatura di 6-8 °C in un calice tipo Bordeaux. Ottimo in abbinamento a scaglie di Parmigiano Reggiano e crostacei.
